COLLIO MALVASIA

The vine is entirely grown on substantial layers of clay and sandstone, known in the area as “ponca”.
The result is a wine of character and personality, with intense mineral and spicy notes; in the mouth the crispness and sapidity mask a wealth of structure and remarkable body, making for a pleasant yet never clichéd flavour. An interesting wine (especially) after having been aged for a few years.

VINEYARD
Place: Ruttàrs hamlet, comune of Dolegna del Collio, hill, marl and sandstone soil, south-west facing.. Training system: guyot 10 buds/plant, 5000 plants/hectare, year of planting 1989/1993; hand-harvest, yield 6 tons/hectare.

WINEMAKING AND AGEING
De-stemming and pressing. Fermentation in steel tanks at 18°C. Ageing on the lees for 8 months, ageing in bottle 4 months.

ORGANOLEPTIC SENSATIONS
Colour straw yellow. Intense and very rich flavour of golden apple, white peach, nutmeg, gunpowder, pepper on mineral background. Soft in mouth, balanced freshness with clean saltyness, fruity and mineral finish.

FOOD PAIRING
First courses with mushrooms, oysters, grilled fish. Serve at 11-12°C.

BOTTLE SIZE
Bordeaux-style bottle 0,75 L.

It perfectly develops the soul of Ruttàrs’ hill. In mouth it’s crisp and salty, In the nose it smells like sea water with elegant aromatic hints which make complex the wine. Full in body, it’s a long-ageing wine that becomes fascinating after some years of rest inside the bottle.
